Stay energized and nourished with this lunchtime staple!
6 oz tuna
1 cup diced celery
1/2 cup diced sweet onions
1/4 cup chopped fresh dill
1 juice of lemon
1 tbsp olive oil
1 pinch salt and pepper
6 butter lettuce leaves
In a bowl combine the tuna, celery, onions, most of the dill (reserve some for topping, if you like), lemon juice, oil, pepper and salt and gently mix.
Arrange each portion on two lettuce leaves and serve.
Top with extra dill if desired.
